Pappardelle Pasta – Davio’s Welcomes the Fall Season with New Pasta Dish Featuring Local
Ingredients

(Philadelphia, PA) ­ As the weather changes and takes on a chill, wrap yourself in the warm flavors of Papardelle Pasta with Braised Short Ribs and Butternut Squash at Davio¹s Philadelphia. Executive Chef David Boyle brings the best of the fall to the table by using locally sourced, al dente papperdelle which serves as the perfect canvas for tender short ribs to mingle with sweet roasted butternut squash ($27) The new dish is available now at Davio¹s Northern Italian Steakhouse Philadelphia, or try this recipe
and experience the finest flavors of the season right at home!

Pappardelle Pasta with Braised Short Ribs and Butternut Squash

Ingredients:

2 lb of fresh pappardelle pasta (ours is locally sourced from Severino Pasta in New Jersey)

1lb of braised boneless beef short ribs

2 cups of roasted butternut squash (diced)

1 bunch of sage (chopped)

4 ounces of unsalted butter

Half a tablespoon of garlic minced

1 cup of veal stock

1/4 cup of red wine

Directions:
1. In a large sauté pan add butter and garlic to cook for 30 seconds until butter is melted and garlic is translucent

2. Add short ribs and red wine. Bring up to a boil and reduce by half

3. Add roasted butternut squash and veal stock. Reduce down to half. In a separate pot blanch parppardelle in boiling salted water until al dente (3-4 minutes)

4. Strain pasta and add to saute pan with sage

5. Season and serve.

Here’s a tip from Brenda for looking for Vietnamese food in Philiadelphia and things to do, She says:

I live 35 minutes outside Philly, in South Jersey.

The absolute BEST place to eat is called Vietnam Restaurant. I have been going there for 25 years! It is located in the China Town section of Philly and is great fun to walk and visit the area.

The Convention Center & Gallery Mall are close to China Town. Also close is the Reading Terminal Market  another fun place to walk thru and tons to eat and good pastries at the Amish market there

Philly has tons of historical sites all within walking distance of each other.

My best suggestion. Put on comfortable walking shoes, go to the visitors bureau and grab a map and audio tour, start at Betsy Ross House. and take a walk thru history! You will never run out of things to see.

South Street has tons of places to eat. Go have lunch at Copabanana –  located at: 344 South Street

Night time can be rowdy so best to go during the day. Not a place to take small children.
